Tomato Mozzarella Basil Salad is a simple Mediterranean summer dish made with ripe tomatoes, soft mozzarella, fresh basil and extra virgin olive oil. This is the kind of recipe where the ingredients matter more than the cooking. Choose tomatoes that are ripe, juicy and full of flavour, because they are the heart of the dish. It is fresh, colourful and perfect for warm days when you want something light, beautiful and easy to prepare.

Wash the tomatoes and cut them into slices or wedges.
For the best flavour, use ripe salad tomatoes, vine tomatoes, beef tomatoes or heritage tomatoes if you can find them.

Drain the mozzarella and cut it into slices or tear it gently into small pieces.
If you are using mozzarella pearls, you can leave them whole or cut them in half.

Place the tomato slices and mozzarella on a plate.
Arrange them gently so the red tomatoes and white mozzarella look fresh and balanced.

Add fresh basil leaves on top.
Sprinkle with a small pinch of salt and black pepper.

Drizzle with extra virgin olive oil.
Serve straight away, or let it rest for 5–10 minutes so the flavours come together.
