A simple homemade strawberry jam made with fresh strawberries, sugar, lemon juice, and a little cinnamon. This small-batch fridge jam is bright, fruity, and perfect for spreading on toast, serving with yogurt, or sharing with neighbours.
* 1kg fresh strawberries
* 400g sugar
* 2 tbsp fresh lemon juice
* 1 cinnamon stick, optional

Wash the strawberries, remove the green tops, and cut them into halves or quarters, depending on their size.

Place the strawberries in a large pan. Add the sugar, fresh lemon juice, and cinnamon stick if using. Stir gently and let the fruit sit for a few minutes so the strawberries begin to release their juice.

Place the pan over medium heat and bring the mixture to a gentle boil. Stir often, then lower the heat and let it simmer for about 25–30 minutes, until the strawberries soften and the mixture becomes glossy and thick.

Carefully spoon the hot jam into clean jars. Leave a little space at the top, then let the jars cool at room temperature.

Once cooled, keep the jam in the fridge. This is a small-batch homemade fridge jam, not a long-life canned preserve, so it is best enjoyed within 1–2 weeks. Always use a clean spoon when serving.
