A light and simple meal made with pan-fried salmon and tender French beans. Perfect for busy days when you want something healthy, filling, and easy to prepare.

Wash the French beans and trim both ends. Cut them in half if they are long. Pat the salmon dry with kitchen paper. Prepare the olive oil, basil, and seasonings.

Bring a pot of water to a boil. Add a little salt, then cook the French beans for 10–12 minutes until tender. Drain well.

Place the warm beans in a bowl. Add a little olive oil and chopped basil. Mix gently. If you like, add a small splash of vinegar for extra freshness.

Heat a frying pan with a little olive oil. Cook the salmon over medium heat for 3–4 minutes on each side, depending on thickness, until golden outside and cooked through.

Place the salmon on a plate with the French beans on the side. Add black pepper or a little extra olive oil if desired. Serve warm and enjoy.
