One-Pan Avocado Toast with Fried Egg

This one-pan avocado toast with fried egg is simple, quick, and satisfying. The egg is fried first, then the bread is toasted in the same pan with a little butter. Sliced avocado keeps it fresh and easy, making this a practical breakfast or light lunch for everyday family life.

Ingredients

  • 1 slice of bread, sourdough or wholemeal
  • ½ ripe avocado
  • 1 egg
  • 1 teaspoon olive oil or cooking oil
  • 1 teaspoon butter
  • A pinch of salt
  • A pinch of black pepper
  • A few chilli flakes, optional
  • A few drops of lemon juice, optional

Fry the egg

Heat a small frying pan over medium heat. Add the oil, then crack in the egg. Fry until the white is set and the yolk is cooked to your liking. Remove the egg from the pan and set aside.

Toast the bread in the same pan

Add the butter to the same pan. Place the bread in the pan and toast for 1–2 minutes on each side, until golden and slightly crisp.

Slice the avocado

While the bread is toasting, cut the avocado in half, remove the stone, and slice the avocado flesh.

Add the avocado

Place the toasted bread on a plate. Lay the avocado slices on top and sprinkle with a little salt and black pepper.

Add the egg and serve

Place the fried egg on top of the avocado. Add chilli flakes or a few drops of lemon juice if you like. Serve immediately.
