A simple and comforting zucchini frittata made with just a few ingredients. Light, soft, and full of everyday flavor, it is perfect for a quick lunch or an easy dinner for two.

Ingredients

2 medium zucchini1 teaspoon salt, plus a little more if needed1 to 2 tablespoons olive oil3 eggs (or 4 eggs for a thicker frittata)A little black pepper, to taste

Slice the zucchini

Trim off both ends of the zucchini, then slice them into thin rounds.

Salt the zucchini

Place the sliced zucchini in a bowl, sprinkle with salt, and let them sit for 15 to 20 minutes. This helps draw out the extra moisture. After that, pour away the water.

Cook the zucchini

Heat olive oil in a frying pan over medium heat. Add the zucchini and cook until softened, with a few lightly golden edges on the surface

Add the beaten eggs

Beat 3 to 4 eggs in a bowl until smooth. Pour the eggs evenly over the cooked zucchini in the pan. Cover with a lid and cook for about 5 minutes, until the bottom is set and the top is almost firm.

Serve

Once the frittata is cooked through, remove it from the pan and transfer it to a plate. Serve warm.
